RECIPE: Dorayaki, Japanese pancake with Red Bean Filling

Dorayaki
Dorayaki is a Japanese sweet pancake with red bean paste filling. You can find them as snacks at Japanese grocery stores. They are very easy to make, so I decided to make a big batch today.


Ingredients
2 Eggs
80g White Sugar
1 tbsp Honey
1/2 tsp Baking Soda
50ml Water (1.69 fl. oz)
130g Cake Flour (4.59 oz)
1~3 tsp Water to adjust the thickness of the batter
Red Bean Paste

Direction
1. Mix all ingredients together. (Except the 1-3 tsp water and red bean paste)
2. Let mixture sit for 30 minutes.
3. Heat up the griddle in medium heat.
4. Using a ladle, pour batter on griddle. Try to make a round pancake.

5. Wait for a few minutes or until you see bubbles on pancake. Flip the pancake.
6. Cook the other side for around 10-20 seconds.
7. Place cooked pancake on a large plate for later.

8. Add red bean paste on one pancake.
9. Finish up with another pancake on top. (Like a burger)

The pancake itself tastes great with addition of honey! Red bean paste I used is the premade ones from Tokyo Fish Market, Berkeley. Of course, it will be best to make your own red bean paste. It is pretty easy but it takes time.

If you have a slow cooker, you just need to add a lot of water to the red bean. Cook for around 6-8 hours until it is soften. Drain out the water from the red bean. Cook the red bean in a small pot and mix until the soft red bean becomes paste. Add sugar to your taste.

    1. Definitely very easy to make! It's like making a sandwich! ^_^ If you can, there are some pre-made red bean paste that you can get from Asian market. That will save you a lot of time.
