Clear Ramen & Miso Ramen at Shiba Ramen (Soft Opening), Public Market Emeryville, Northern California USA

Tonight is a soft-opening for Shiba Ramen! Here's all the ramen on their menu: Clear or Miso. Clear is actually very flavorful. The only down-side is that the bowl of ramen is overall warm, not hot. It will be GREAT if they can make a delicious hot bowl of ramen for this type of cold weather! 

Miso ramen is heavier than I thought, but is it still good. (especially for people who love heavier broth type) Along with menma (bamboo shoots) corn, and bean sprouts, the miso ramen is well balanced countering the heavy miso broth.

Thanks to City Foodsters, I get a back story of Shiba Ramen and their ramen noodles:

"It's started by two former chemists, who decided that it was time to open a ramen shop after being disappointed by the lack of availability in the East Bay. Now we finally have another good ramen option that's 50% cheaper than Ramen Shop in Oakland. Service is fast and you slurp your bowl at one of the Public Market's tables or standing counters. Last night, there were only 2 options available: Miso and Clear. In the future, they will add shio, spicy tan tan mein, tori paitan, brothless, vegetable, and chicken ramen. And best of all, the noodles are from Sun Noodles (the same provider for places like Momofuku, Totto, Ivan, Daikokuya, Tsujita)."


The type of ramen noodles they have are the bouncy, chewy ones. They are the ones that you can "slurp" easily so that it carries the broth along up into your mouth! 

Their price is also something I feel more reasonable for a bowl of ramen. (or what a lot of people called "artisan ramen") It is around $9-$11. The restaurant is like a booth inside a public food court, so everything is basically self-serve and tips are omitted. (When paying with credit card, there's no option for tip...) 

Since it is still the beginning of Shiba Ramen, employees are still in training. 


Also, I noticed that they are also hiring too! If you are looking for a job at a busy ramen shop nearby Emeryville area, Shiba Ramen will be one of them!
