Meyer Lemon Ramen & Hokkaido Spicy Butter Corn Miso Ramen at Ramen Shop, Oakland USA

Meyer Lemon Ramen is a yuzu-inspired recipe for Northern Californians. Just by the name of the ramen, you already know the broth will be acidic rather than salty. The ramen has salt-cured egg and plenty of vegetables: maitake and king oyster mushrooms, tomato confit, broccolini, eggplants, and mizuna. (water greens)



Hearing from one of the owner of the shop, Ray, this ramen is inspired by the Yuzu Ramen at Afuri Ramen from Tokyo, Japan. (see photo below) Yuzu is an Asian citrus. It is very common to use it for Asian cuisine. The citrus is more like a grapefruit rather than lemon. Here's more detail about the interview at LuckyPeach.com. Ray mentioned:

"One specific trip was when we went to Afuri, in Ebisu. That beautiful balance of acidity—it just opened our eyes to a different style of ramen. We wanted to reinterpret it through a Northern California lens. There, it’s yuzukosho. For us, the citrus that’s most defining about the Bay Area are Meyer lemons. Everybody has them, and they’re so plentiful."

Second, it's the Hokkaido Spicy Butter Corn Miso Ramen. (See top photo) YUMMMMM... Just by hearing the name really makes me hungry right now already. I tried this ramen multiple times, and it is very good every single time. It tastes exactly as it sounds, I am sure it will not disappoint you!

  2. For so much of my life, Ramen was a dried, packaged noodle with a salty seasoning packet included. Bland. But Hokkaido Spicy Butter Corn Miso Ramen? Wow. Just the name alone makes me want to try it. :D
